Is the “Continuous power output up to 850 W.” limited by heat dissipation, or is it an electrical component limit? What would be required to use at 1000W continuous? Or would it be better to use a completely new or different 50V ESC?

If your phase current does not exceed 45 amperes, you are limited by the temperature and the DC link voltage ripple. The ripple can be managed by adding external capacitance near Myxa. The current limit is impossible to circumvent without redesigning the power stage.
If Myxa dies not fit your requirements, consider designing a custom power stage using Mitochondrik:
